Matcha Black Sesame Cupcakes

  Prep Time: 40 mins | Cook Time: 16-18 mins        Makes 12 servings

Ingredients

  • 1 cup all purpose flour
  • 2 tbsp ONE ORGANIC matcha
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 3/4 cups granulated sugar
  • 1/4 cup unsalted butter
  • 1/2 cup milk 
  • 1 tsp of vanilla extract
  • 2 tbsp vegetable oil

Black Sesame Frosting

  • 1/2 cup unsalted butter
  • 1 1/4 cup of powdered sugar
  • 3 tbsp of black sesame powder
  • 1 tsp of vanilla extract
  • a pinch of salt

Directions

  1. Preheat oven to 350º
  2. Sift together the dry ingredients (flour, matcha, baking powder, salt) and set aside.
  3. In a separate bowl, beat the eggs on high for about 30 seconds until frothy. Gradually add the sugar and continue beating the eggs for 5 minutes.
  4. In another separate bowl, warm the milk in the microwave slightly to melt the butter (careful not to boil). Add the vanilla and oil. and mix. Set aside to cool. 
  5. Gradually add the dry ingredients, in 3 separate portions, into the egg mixture, while mixing slowly to incorporate.
  6. Slowly add the milk mixture into the batter while continuing to mix.
  7. Line a 12-cup muffin tin with paper liners and fill each cup 3/4 full with batter.
  8. Bake for 16-18 minutes or until a toothpick comes out clean.
  9. Cool in the tin briefly before transferring to a wire rack to cool completely.

For the Frosting:

  1. In a medium bowl, cream butter until smooth and pale in color.
  2. Add the vanilla extract and salt. Mix until just combined.
  3.  Incorporate the powdered sugar in 1/3 increments. 
  4. Add the black sesame powder and mix to combine.
  5. Transfer the frosting into a piping bag with a tip and begin decorating!
